Kwarezimal
Lenten Almond
Cakes
This
is made during Lent and contains no fat or eggs. The word kwarezimal
refers to quaresima, literally the quadragesima, the forty days
of Lent.
Mix
the ground rice, ground almonds, flour, sugar, cinnamon, cocoa,
rinds and a little orange-flower water a pinch of vanilla and some
almond essence. Add some juice of lemon and orange and just enough
water to make a stiff dough. Knead lightly until well amalgamated
and shape into ovals, approximately 17.5 cm long, 5 cm wide and
2 cm thick. Place on greased and floured baking trays and bake at
150'C for about 30 minutes.
While
still hot, spread with Malta honey and press on chopped, unsalted
pistachio nuts or chopped roasted almonds or hazel nuts.

Ground Rice
200g Self-Raising Flour
400g Ground Almonds
400g Brown Sugar
1tsp Mixed Spice
1tsp Cinnamon – Kannella
4 tsp Cocoa
2 tbsp Orange Flower Water – Ilma Zahar
A bit of Vanilla
A bit of Almond Essence
Some juice of Lemon and Orange
10 tbsp Water

degrees for 30 mins in pre-heated oven
For
topping use some chopped Almonds, Honey and grated Lemon
